Their appeal is soft flesh, a refined sweet-sourness and a vivid orange, and they announce early summer.<\/p>\n<h3 class=\"wp-block-heading\">In season in early summer, with Nagasaki and Chiba the main producing areas<\/h3>\n<p class=\"wp-block-paragraph\">Loquats are in season in early summer, roughly May to June, with greenhouse fruit appearing a little earlier. They do not keep and do not ripen after picking, so the window when they are at their best is short: a strongly seasonal fruit. The main producing areas are Nagasaki and Chiba, with Chiba's known as Boshu loquats. In every variety, fruit close to fully ripe is richer in sweetness and aroma than early-picked.<\/p>\n<h3 class=\"wp-block-heading\">How to choose them and how to handle the stone<\/h3>\n<p class=\"wp-block-paragraph\">When choosing good loquats, these points make it easier to tell.<\/p>\n<ul class=\"wp-block-list\">\n<li>Deep orange skin, plump and even on both sides<\/li>\n<li>A white bloom and down still on the surface, taut and glossy<\/li>\n<li>A firm stalk, without marks or darkening<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\">The skin peels away cleanly by hand from the base. The large stone, the leaves and unripe fruit contain amygdalin, a cyanogenic compound that can harm you raw, so avoid things like grinding the stone to eat, and enjoy the well-ripened flesh. The ripe flesh itself is nothing to worry about eaten normally. The flesh discolours easily, so peeling it just before eating keeps the colour.<\/p>\n<h2 class=\"wp-block-heading\">How to eat loquats<\/h2>\n<p class=\"wp-block-paragraph\">Loquats are good as they are, of course, and processed, drawing on their juicy sweetness. Here are the standard ways.<\/p>\n<h3 class=\"wp-block-heading\">As they are, as compote, or in jelly<\/h3>\n<p class=\"wp-block-paragraph\">Peeled and eaten as they are is the finest way to have a loquat. Chilled a little before eating, the fresh sweetness comes forward. Slightly firm ones, or ones where the acidity bothers you, make a refined dessert simmered with sugar and lemon as compote. Set with its syrup into a jelly, it makes a cool-looking dish. Its gentle sweetness also goes with yoghurt and ice cream.<\/p>\n<h3 class=\"wp-block-heading\">As jam, in syrup, or in a tart<\/h3>\n<p class=\"wp-block-paragraph\">When you have a lot, or when they are about to pass their peak, jam or fruit in syrup keeps them. Jam simmered to a soft set goes with bread and yoghurt. Fruit in syrup is good as it is, and paired with custard in a tart or a pie it makes a showy dessert. Frozen into a sorbet or a smoothie, it is cold and welcome in hot weather.<\/p>\n<h3 class=\"wp-block-heading\">How to keep loquats<\/h3>\n<p class=\"wp-block-paragraph\">Loquats are very delicate and spoil easily. They do not ripen after picking, so eat them as soon as you can after buying. Over-chilling costs them flavour, so until you eat them, wrap them in newspaper and keep them somewhere cool with air moving. Chilling them in the fridge two or three hours before eating gives just the right feel in the mouth.
